Bengal Seafood Salad

Carnival of the Recipes

I love this recipe. It is one of my favorite summer recipes. It is low fat and low calorie, as well as good! I hope you like it! This recipe serves 4 and is very easy to make.

Bengal Seafood Salad
  • 12 ounces crab meat
  • 4 ounces cooked shrimp, cut into 1 inch pieces
  • 1/4 cup minced onion
  • 1 cup finely sliced celery
  • 3 ounces sliced water chestnuts
  • 1 cup canned crushed pineapple--unsweetened
  • 1/4 cup raisins
  • 2 tablesppons sunflower seeds
  • 3 tablespoons lemon juice
  • 5 tablespoons plus 1 teaspoon reduced calorie mayonnaise
  • 1 cup plain lowfat yogurt
  • 1 teaspoon coconut extract
  • 1 tablespoon curry powder
Combine all ingredients in a bowl. Mix well. Chill!

What I do is kick them in the pants with a diamond buckled shoe!
